Ernahrungskonzept
The Ernahrungskonzept aims to create a healthy, sustainable world for our future generations. It focuses on preserving and developing the health of our soil, plants and animals as well as the nutrition and sustainability of our food system.
Our Ernahrungskonzept consists of a range of foods, ingredients and recipes that contain mainly plant-based proteins, vegetables and fruits, but also whole grains, nuts, seeds, dairy products and beans. In addition to these, it includes a number of nutrient-dense fatty acids and antioxidants.
In our kitchen, we use a variety of fresh herbs and spices as well as a variety of raw nuts, seeds and dried fruit. We are committed to using only high-quality, seasonal and local ingredients.
We cook with fresh, organic ingredients – no additives or preservatives are used in our kitchen. We do not use artificial sweeteners and we do not add any salt, sugar or fat to our foods.
This means that our foods are not only nutritious, but they also taste delicious! We also try to keep our recipes simple and easy to prepare.
Our recipes include a large selection of fruits, vegetables and proteins that are all easily attainable. These are sourced from local farms and markets.
For our nut-based products we use only nuts that are not processed or refined, such as almonds, walnuts, hazelnuts and macadamias. We also only use natural, unrefined coconut oil and we do not use palm kernel oil in our nut-based products.
These natural oils contain a high level of anti-oxidants, which help to fight free radicals. In addition, they are full of unsaturated fatty acids.
We also use a wide range of whole grains, legumes and vegetables that are rich in vitamins and minerals. This is important for our children and our patients, who need to get enough of these nutrients in their diets.
As a result of this, we can offer our children and patients a wide range of healthful alternatives to common dietary habits, such as red meat or processed foods.
In addition, we have also included many vegetarian and vegan options in our menus. We aim to make our dishes as nourishing as possible for all our guests, but especially for our patients, who often have a higher risk of heart disease.
Our philosophy reflects our passion for cooking with fresh, local, organic and biodynamic ingredients. It also aligns with our ethos of’super lecker und gesund – fur uns, der Erde & die Natur’.
All our meals are made from fresh, regionally grown ingredients and prepared from scratch with only the highest quality ingredients. Our kitchen is run by our head chef and his team, who ensure that all our dishes are prepared from scratch and in an ecological manner.
We work with local suppliers and have close relationships with them to ensure that we can purchase only the best quality ingredients. We are also committed to reducing our impact on the environment by using renewable energy sources and promoting recycling and composting.
